Yesterday was the first Sunday of the 2012-2013 season and we had a BBQ at our house with some of our friends. I was set to cook chicken, pork, and even some beef, but I have two friends who are vegans. Now, they always offer to bring their own food in these situations, however the prospect of creating some new recipes and BBQing for both carnivores AND vegans intrigued me.
So here’s what I did. First off, I cleaned the grill thoroughly. Designated one side for meat and one side strictly vegan as to not contaminate the vegetables. My wife cut up red and yellow peppers, onion, and tofu. Then she skewered all of that plus baby portabellos and a slice of lemon. Then I put the shish kabobs on the grill and BBQ’ed them using applewood smoke at about 350 degrees. I brushed them with a homemade peach and mango BBQ sauce and cooked them for about 15-20 minutes.
It turned out deliciously. Not only did vegans enjoy it, but meat eaters as well.
Another thing to try is grilled peaches lightly brushed with a BBQ suace of your choosing.
